Many days it seems like I spend my entire day in the kitchen. Not that I am making anything special, just trying to feed my family. I am sure I am not the only one with kids who seem to have a hollow leg and want to eat all day long. I often stare blankly into the refrigerator wishing that something would magically appear that was not there 10 minutes ago. And like many other moms I have days where I run out of steam or the kids need me and dinner prep falls by the wayside. I'm not complaining here. It's all part of life and having a family. Recently I have been working on changing some of this. I am so thankful because we were able to score a chest a freezer on Craigslist for a quarter of what we would have paid retail. I am working on getting some meals into the freezer. I have been freezing in a variety of portions. Some things are in larger portions for family dinners while others are just enough for the girls and I to have for lunch. I am able to prepare somethings in bulk and just pull them out to heat. I have also loved having the ability to buy a lot of something if I find a great deal.
So far I've been able to freeze/buy:
- 20 lbs. transitional nectarines @ under a $1 a lb.
- 10 chickens from a local farm
- organic frozen peas in bulk
- chicken pot pie filling
- chicken soup
- pumpkin coconut flour muffins
- mini spinach and mushroom frittatas
- hashbrowns
- aaaand some more stuff
Before I was able to finish writing this it turns out the girls and I are sick. I am once more grateful I have some things stashed away in my huge freezer. Sometimes I come back in from the garage and brag to Kurt that I was just grabbing something really quick out of my big freezer. 'Cause it's awesome.
